SERVES: 4 2 tbsp (30 mL) olive oil 3 Yukon Gold potatoes, peeled and diced (approx. 2 cups/500 mL) 1/4 tsp (1 mL) each salt and pepper, divided 4 eggs 1/2 cup (125 mL) Compliments Medium Chunky Salsa, plus more for garnish 1/4 cup (60 mL) thinly sliced green onions, divided 1/4 cup (60 mL) Sensations by Compliments Tex-Mex Finely Shredded Cheeses 1/4 cup (60 mL) sour cream 1. Preheat oven to broil. Heat oil in a medium oven-safe skillet over medium heat. Add potatoes and stir occasionally until lightly browned, about 8 to 10 min. Betty's Lunch at Holly Hill Inn with Rick --NO RECIPE--In this video, Betty and Rick have lunch at a historic restaurant, Holly Hill Inn, in Midway, Kentucky. The original building was constructed around 1800, but was eventually destroyed by fire and was replaced by the current structure in the mid-1800′s. Holly Hill Inn has been operating continuously as a restaurant since 1979. The current owners, Ouita and Chris Michel bought Holly Hill Inn in 2000 and have operated it since that time. Rick and I had a lovely, private lunch out on the front porch, while the rest of the house was bustling with guests. Rick ordered a green salad, pork with mango salsa with cheese grits and green beans, and a dessert of chocolate pecan bourbon pie. I ordered iced tea, 4 country ham biscuits with apple butter, cream of asparagus soup, chicken and country ham crepes, green beans, with buttermilk pie for dessert.
