Of course I have a standard/traditional asparagus soup that I make, but often, I like to though in other ingredients to mix things up and change the flavors a bit. For this version of asparagus soup, I add some potato, which when cooked and blended together with the asparagus and the other ingredients, gives the soup more body and substance. It’s like getting cream of asparagus soup without as much cream! This soup is one of the faster, and healthier options you can make for yourself. It takes about 20 minutes, and if you make a large batch the leftovers freeze really well.
