@DEEJAV123 Thank you for your comment. Yes I did say I would increase the temperature after the 4th hour of cooking, but after looking at the pernil I left it at the same temperature and removed the foil and it turned out great.

yeah I got my first pilon about two months ago. sad but true it took me this long to get one. Yet I love it. Love the recipe very similar to mine.
I loooover pernil. Its a tradition to have it during any party or holidays. I love pernil pero conio it takes too long. LMAO.

I am trying your receipt on Thanksgiving. I am cooking a turkey and a 10LB pernil in the same oven around the same time, but I am cooking my turkey at 325 degrees. How long should I cook the pernil if the oven is set at 325 degrees? I would also like to know if I should raise the temperature when I remove the foil off the roast?
I love your recipe we are making it as i write to you we can’t wait till it’s done we searched for recipes and found that your recipe reminds me of puerto rico and how my uncle makes it. Thanks for sharing.
