INGREDIENTS Rice (see my earlier video for how to cook the rice : ) 100ml Dashi Sauce (See my earlier video ‘Cold Tofu’ for how to make the dashi sauce : ) 100g Chicken thigh fillets with the fat trimmed 1 shallot (spring onion) 1 small onion 3 eggs 3 shitake mushrooms 80g takuwan (pickled daikon radish) – Optional METHOD Preparation: Put 3 shitake mushrooms in 120ml (1/2 cup) of warm water and soak for 3 hours. Pour the water off into a cup (you will use it later). Cut the stalks off the mushrooms and discard them. Cut the mushroom tops into thin strips. Cut the chicken into bite-size pieces. Cut the shallot into short pieces of about 5cm (2 inch) and then also cut them lengthwise into thinner strips. I cut them into four.
