Tonight we are using some leftover London Broil from Sunday’s dinner to make open faced philly cheese sandwiches! Super simple and really quick, you can throw these together in 15 minutes if you had to! You just top a bun with some of the broth then the meat and the veggies, sprinkle or top with a slice of cheese and you have a delicious open faced sandwich to enjoy in no time! You don’t have to wait to have leftover steak or roast beef to make this quick dish! All you need to do is go to the deli at your grocery store and pick up some thin sliced roast beef to heat up in the broth. INGREDIENTS Rice (see my earlier video for how to cook the rice : ) 100ml Dashi Sauce (See my earlier video ‘Cold Tofu’ for how to make the dashi sauce : ) 100g Chicken thigh fillets with the fat trimmed 1 shallot (spring onion) 1 small onion 3 eggs 3 shitake mushrooms 80g takuwan (pickled daikon radish) – Optional METHOD Preparation: Put 3 shitake mushrooms in 120ml (1/2 cup) of warm water and soak for 3 hours. Pour the water off into a cup (you will use it later). Cut the stalks off the mushrooms and discard them. Cut the mushroom tops into thin strips. Cut the chicken into bite-size pieces. Cut the shallot into short pieces of about 5cm (2 inch) and then also cut them lengthwise into thinner strips. I cut them into four. Break the eggs into a cup and gently break up the yolks and whites until they are well mixed. Slice the onions into bite-size strips. Cut the takuwan into fou
